Arepa Boyacense

Arepa Boyasence, cheese filled sweet yellow corn breads from the Boyacá region of Colombia. This recipe is super easy and comes together super fast. It’s the perfect accompaniment to any Colombian dish and is sure to be a crowd pleaser.

Ingredients:

For the dough:

  • 1 and 1/4 cup yellow masa harina
  • 3 tablespoons of flour
  • 3 tablespoons of panela
  • 1/2 teaspoon salt
  • 1 cup of cuajada (or any other fresh white cheese)
  • 2 butter spoons
  • 1 cup milk

For the filling:

  • 2 cups cuajada
  • 4 tbs panela sugar

Directions:

  1. Prepare the filling by grating the Cuajada (reserving 1cup for the dough) and mixing the remaking two cups with Panela
  2. In a large bowl combine flour, yellow corn pre-cooked corn flour (masa harina amarilla), butter, remaining grated cuajada, panela, milk and salt
  3. Knead until the dough until it’s smooth soft. Let it rest for 10 minutes.
  4. Once rested split dough into 12 and roll into balls.
  5. Flatten each ball out and stuff with 3tbs of the filling. Then close the arepa and form it with your hands into a puck shape.
  6. Cook on medium low heat on a buttered skillet or comal for 3-4 minutes per side or until slightly brown all over.
  7. Serve hot as a accompaniment to your favourite Colombian dishes
