Ukrainian Easter Brioche

Paska
Paska is a typical bread served during Easter in Eastern Europe, particularly Ukraine.t The name Paska comes from the Greek word for Easter “Paskha”. A sweet frosted variation exist called Kulich, very popular in Russia and Ukraine. Paska hold a significant importance for Ukrainians since it’s an integral part of many Easter ceremonies and traditions. Served especially for the eve of Easter, this bread is perfect slathered in butter and jam for breakfast and makes the best French toast the next day.

Ingredients:
6cups flour
-1 packets of yeast
-2tbs sugar
-1 1/2 cups of milk
- 1tsp vanilla extract
-3 eggs
-2 tsp salt
-1/4 cup butter
-1 egg yolk
Directions:
1) Bloom the yeast in 1/2 cup of milk with 2 tbs of sugar heated to 35C.
2) Combine four and salt then add the bloomed yeast and the cup of milk. Knead into a shaggy dough then add the eggs.
3) knead the dough for 5 minutes, it will be very sticky, avoid adding extra flour. Then add the butter and knead another 5-8 mins.
4) Let the dough rest for 1 hour or until it has doubled or tripled in size.
5) Deflate the doughy and divide in 2 then divide o d of the half’s in 3 to form the braid. Roll out one of the half’s into a 9 inch disk and the other three small balls form into long strands and braid them.
6) Butter a 9 inch cake pan and place the dough disk and the coiled braid on top, let proof for 40 minutes.
7) Preheat oven to 320 F 160C
8) Brush egg yolk on the top of the dough bake for 40 minutes at 320F.
9) Once baked, cool on a rack and serve.
