Coconut Johnny Cakes
Johnny cakes are found across the English speaking Caribbean with Nicaragua’s Caribbean coast being no exception. Coconut Johnny cakes are found year round in Bluefields (NI) but they are especially popular on Good Friday. Coconut Johnny cakes be made in advance hence not needing to cook on that holiday. It is enjoyed with a cup of tea, some fresh cheese and almibar (Nicaraguan candied fruit also known as “stew” in Bluefields.
⏰Prep Time: 15 min ⏲️Cooktime: 30 min 🍽️Servings: 6 Johnny Cakes
Ingredients:
- 2cups flour
- 2tsp baking powder
- 2tbs coconut oil
- 1tbs sugar
- 1tsp salt
- 2/3cup coconut milk
Directions:
- Mix flour, baking powder, salt and sugar together.
- Incorporate the coconut oil to the dry ingredients and work the coconut oil into the flour until it is a sandy texture.
- Add coconut milk and knead into a smooth dough. Let it rest for 10 minutes.
- Once the dough is rested, divide it into 6 equal balls.
- Preheat oven to 390F
- Roll the balls out and poke them with a fork then place them on a baking sheet. Bake for 20 minutes at 390F, or until golden brown.
- Let the Johnny cakes cool and serve with butter and fruit stew (almibar)
