Turkish Ramadan bread.

Ramazan Pidesi
Ramazan Pidesi is a typical Turkish bread exclusively made during the holy month Ramadan. Its shiny crust and fluffy interior makes a it a perfect accompaniment to soups, salads and dips. It is typically served fresh out of the oven while still warm.

Ingredients:
- 3 cups All purpose flour
- 11/4 cups water
- 1 tsp active dry yeast
- 1 tsp oil
- 2 tsp salt
- sesame seeds
- nigella seeds
- 1 tbs yogurt
- 1 egg yolk
- 1 tsp sugar
Directions:
- Activate the yeast with the sugar and 1/4 cup
- lukewarm water, let it sit for 15 minutes.
- In a bowl combine the flour and salt make a well and add the water and yeast mixture. Combine into a shaggy dough.
- Knead the dough on a floured until soft (around 5-7
- minutes).
- Let the dough rest for 1 h under a damp cloth until it has doubled in size.
- Preheat oven to 180C 350F
- Degas the proofed dough, shape it into a ball and let it rest 15 more minutes.
- Once rested, roll the dough to a 25cm circle that is about 3cm thick.
- Beat the egg gold with the yogurt and brush it in the surface of the dough, then use your fingers to created grooves in the dough in a crisscross pattern, sprinkle with sesame and nigella seeds.
- Bake at 350F for 30-40 minutes or until golden brown.
- Once out of the oven let it rest 10 minutes on a rack, serve and enjoy.
