Turkish Ramadan bread.

Ramazan Pidesi

Ramazan Pidesi is a typical Turkish bread exclusively made during the holy month Ramadan. Its shiny crust and fluffy interior makes a it a perfect accompaniment to soups, salads and dips. It is typically served fresh out of the oven while still warm.

Prep Time: 1h45min ⏲️Cooktime: 30min 🍽️Servings: 1 loaf

Ingredients:

  • 3 cups All purpose flour
  • 11/4 cups water
  • 1 tsp active dry yeast
  • 1 tsp oil
  • 2 tsp salt
  • sesame seeds
  • nigella seeds
  • 1 tbs yogurt
  • 1 egg yolk
  • 1 tsp sugar

Directions:

  1. Activate the yeast with the sugar and 1/4 cup
  2. lukewarm water, let it sit for 15 minutes.
  3. In a bowl combine the flour and salt make a well and add the water and yeast mixture. Combine into a shaggy dough.
  4. Knead the dough on a floured until soft (around 5-7
  5. minutes).
  6. Let the dough rest for 1 h under a damp cloth until it has doubled in size.
  7. Preheat oven to 180C 350F
  8. Degas the proofed dough, shape it into a ball and let it rest 15 more minutes.
  9. Once rested, roll the dough to a 25cm circle that is about 3cm thick.
  10. Beat the egg gold with the yogurt and brush it in the surface of the dough, then use your fingers to created grooves in the dough in a crisscross pattern, sprinkle with sesame and nigella seeds.
  11. Bake at 350F for 30-40 minutes or until golden brown.
  12. Once out of the oven let it rest 10 minutes on a rack, serve and enjoy.
