Tajik Bread Salad

Ingredients:
Directions:
1 medium size Fatir bread (you can use 2 parathas also)
2 tomatoes
1/2 English cucumber
1/2 Vidalia onion
50g Qurut (kashk) (available in Middle eastern supermarkets)
1 cup water
1/8 cup flax seed oil
Handful of dill
Handful of coriander
1 green onion
Salt
Directions:
1) soak the qurut (kashk) in 1 cup of water for a few hours .
2) Dice the cucumber and tomatoes, finely chop the herbs and finely slice the vidalia onion and green onion.
3) shred the fatir bread into a large bowl or dish and then pour over the liquid qurut (you can season at this point with salt)
4)Top the mixture of bread with sliced onions and heat some flax oil and pour over the hot oil over the bread.
5) Add the remaining vegetables and herbs to the dish and serve.
