Korean-Soviet carrot salad

Morkovcha is a Korean style carrot salad born in Central Asia during the USSR. Koryo-sarams (Koreans relocated in Central Asian countries) created this dish based of ingredients they access to in order to create a replacement for Kimchi. This easy and delicious recipe is a perfect accompaniment for grilled meats, plovs, noodles and more.

Ingredients:
- 4 carrots (or 2-3 large ones)
- 2 cloves garlic (minced)
- 2 tablespoons of onion infused oil
- 1 tsp gochugaru (fine ground)
- 1 tsp coriander powder
- 1 tbs vinegar
- 1tbs toasted sesame seeds
- 1 tbs sugar
- 1 tsp salt
- Ground black pepper
Directions:
- Shred the carrots into a julienne and place in a bowl with salt and sugar and let rest for 20 minutes.
- Squeeze out the liquid of the carrots and drain. Re season with some salt to taste if needed.
- Add the vinegar and the seasoning to the carrots (coriander, garlic, gochugaru, black pepper, sesame seeds)
- Heat in a pan 2 tbs of the onion infused oil until it is almost to smoking point.
- Pour over the sizzling oil over the carrots and mix the carrots.
- You can serve this immediately or keep in the fridge for as long as a week.
