Turkish lentil, bulgur and rice soup

Ezo Gelin Soup

This typical soup from the city of Gaziantep is one of the most iconic soups in Turkish cuisine. The soup is heavy and very nutritious making it a perfect start to any meal. What makes this soup unique is the combination of grains and legumes as well as the use of mint as the main flavouring agent.

Ingredients:

1 cup red lentils

  • 2 tbs bulgur
  • 2 tbs rice
  • 1 yellow onion
  • 4 cloves of garlic
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 tsp pul biber (Turkish chilli flakes)
  • 2 tbs biber salçası (pepper paste)
  • 1 tbs dried mint
  • 1 lemon
  • 1 tbs butter

1) Rinse and check the lentils, rice and bulgur.
2) Finely mince the onion and crush the garlic.
3) Heat a pot on medium heat and add the butter, sweat the onions and garlic until translucent.
4) Season with salt, pepper and pul biber.
5) Add the biber salçası and sauté for 1 minute, then add 2 litres of water.
6) Bring to a boil and add the lentils, rice and bulgur, cover and simmer for 40 minutes or until the soup has thickened and the lentils and grains are cooked, and add the dried mint.
7) Serve hot with a lemon wedge and some bread.
