Uzbek fried dumplings

Fried Chuchvara
Chuchvara are small dumpling from Central Asia. They are also known as Joshpara and dushbara. Chuchvara can be fried (served with yogurt of sour cream ) or boiled which are often served in a broth. These small dumplings are a labour of love but are well worth it.

Ingredients:
- 2 cups of flour
- 1 tsp salt
- 3/4 cup water
- 500g ground meat of choice
- 1 onion
- salt
- pepper
- oil for frying
to serve:
- yogurt or sour cream
- dill
Directions:
- Combine flour and salt and whisk until well incorporated.
- Add the water and knead until it becomes smooth.
- Let the doings rest for 20 minutes.
- To make the filling, grate the onion to a fine paste and add it to the meat with salt and pepper.
- After 20 minutes roll out the dough until it is almost transparent around 1mm thick.
- Cut into 2 inch square and add a teaspoon of filling.
- To fold the dumplings fold them in half on the diagonal and the. Pinch the two ends together to form the shape.
- Fry in oil on high heat for approximately 3 minutes or until golden brown all around.
- Serve fresh out of the fryer with yogurt and fresh dill.
